My husband actually started trying to make his own corned venison recipe about a year ago. It was never bad but never quite hit the mark. I love him for trying. I asked him what he did, what ingredients he used, etc. I took that, did my own research on traditional Corned Beef recipes and made the changes I thought would be good. I am here today to share what I found! Because man is it goooooood!</p><p>The key to Corned Venison is the brine. You have to have a good brine and the patience to let it sit to get a great flavor! </p><p>Another thing that takes corned venison to the next level is having a <a href="https://www.lemproducts.com/product/mighty-bite-8-meat-slicer/meat-slicers">LEM Mighty Bite 8 1/2 Meat Slicer</a>. Of course you can slice it yourself, but having the thin deli like meat takes this recipe to the next level!</p><p>This recipe is great warm or cold. Lower to a simmer and cook until salt and sugar have dissolved. </span></div></li><li id="wprm-recipe-4209-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Turn off heat and cover. Bring to room temperature. I speed this process up by putting it in the fridge.</span></div></li><li id="wprm-recipe-4209-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once cooled, place roast in a Tupperware large enough to hold it and the brine.</span></div></li><li id="wprm-recipe-4209-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Make sure roast is covered. I used a spoon to hold mine down. Any extra brine can be tossed. Cover and place in ridge for 6 days.</span></div></li><li id="wprm-recipe-4209-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Flip meat on third day (or every day).  The longer the roast is in the fridge, it will get saltier, but you want the brine to penetrate all the way to the center of the roast.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Cook Corned Venison</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-4209-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once the roast is done brining, remove roast from brine and discard brine. Gently rinse the roast to remove the salty brine. Any seasonings still attached to the meat are fine. We just want the excess saltiness washed away.</span></div></li><li id="wprm-recipe-4209-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place roast in a stock pot just large enough to hold roast and water to cover it. Just cover with water. Add beef bouillon. Partially cover the pot with a lid and bring water to a SIMMER. </span></div></li><li id="wprm-recipe-4209-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cook for 2-3 hours. Watch the water level to make sure roast stays covered.</span></div></li><li id="wprm-recipe-4209-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove the meat from the water and allow to cool.</span></div></li><li id="wprm-recipe-4209-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Using the LEM Mighty Bite 8 1/2 Grinder, slice your meat as thinly as possible.</span></div></li><li id="wprm-recipe-4209-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve on Reuben, hash, by itself, etc! I’ve had this buffalo pheasant dip recipe in my recipe book for a while and I thought I had already posted it…but I was wrong!</p><p class="p1">There is not a lot of white meat in the wild game spectrum. And the few species there are, I love preparing it like normal chicken. Obviously pheasant is a lot leaner than chicken, but when you boil the pheasant until tender and then continue it in the crockpot for hours with cheese-y goodness, its going to be amazing! Pheasant is just a great meat to work with.</p><p class="p1">This recipe is super easy! Like I said you just boil the meat until tender and then add all of the ingredients to a crockpot and cook for ~3 hours. It’s SOOOO GOOD! I have some in the freezer to reheat for the Super Bowl tomorrow and I can’t wait. This got me thinking and planning some appetizer recipes to help y’all out! I love to bring dips or finger food to parties. They are easy to snack or grab and you can continue socializing.</p><p>With this criteria, and also wanting something unique, but was also easy, my husband came up with this idea. It is an appetizer take on a Chicago dog. We keep <a href="https://wifeofahunter.com/venison-hot-dogs/">venison hotdogs</a> in our freezer because they are easy meals, so it made this recipe 10x easier to make because all we had to do was thaw the hotdogs. </p><p>This is a super fun appetizer that everyone will enjoy! 									<p>These Venison Hot Dogs were the epitome of labor of love.</p><p>When I think of hot dogs my mind normally goes two places. The positive way is eating some tasty all beef dogs, at a baseball game, enjoying America’s pastime. The negative way makes me think of the book the Jungle and the stereotypes of them being made out of pig feet, lips, and other less tantalizing parts. Either way you look at it, they sure are tasty 😂.</p><p>When starting out this adventure of making your own hot dogs, you don’t realize how much work goes into it. You have to grind your meat twice, emulsify it in a food processor, stuff it into casings, and then bring it up to temperature. All this makes you wonder how companies can make hot dogs so cheap. Then you see the giant factories with expensive machines, that do the whole process for you, and you understand.</p><p>Some important notes I found that helped throughout this process is COLD. Keep everything cold. Because you’re putting the meat through a couple different processes, it opens up the chances of fat smearing, and the consistency being off. Freeze your meat after every step and you should be fine. Another note is having help. You can do this all by yourself, but once you get to the sausage stuffer an extra set of hands is INCREDEBLY useful.</p><p>If you have a family, or group of friends, you could totally make a day out of it and turn pounds and pounds of venison into tasty hot dogs! They are very good and the transformation from pink gloop into delicious red wienies is an incredible sight to see. Keeping the mixture that cold will stop the fat from smearing.</span></div></li><li id="wprm-recipe-3655-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place the other half of your meat mixture and ice water into your food processor and repeat the process.</span></div></li><li id="wprm-recipe-3655-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once all of your meat is into the sausage stuffer, punch down the meat to try to get out as many air pockets as possible.</span></div></li><li id="wprm-recipe-3655-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place your cellulose casings onto your stuffer. Push the casings all the way back until you run out of space. The casings should be ~1 inch in diameter so you need a stuffer under ~1 inch to fit.</span></div></li><li id="wprm-recipe-3655-step-0-13" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">When you run out of space cut your casings and tie it off at the end. I used kitchen twine to tie it off.</span></div></li><li id="wprm-recipe-3655-step-0-14" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Preheat your smoker to 180°F. I used a competition blend of pellets, but most fruitwoods would work well here.</span></div></li><li id="wprm-recipe-3655-step-0-15" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Start stuffing your casings, two people makes this process a lot easier. If you have any blowouts in the casings just cut the casings, pinch out some of the exposed meat, and tie it off again at the end with kitchen twine.</span></div></li><li id="wprm-recipe-3655-step-0-16" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">After you have all of your sausage in casings, and tied off at both ends, you can twist them at your desired hot dog sizes. If you have a vertical smoker where you can hang them that works. If you have a regular one you can place them flat on that works too.</span></div></li><li id="wprm-recipe-3655-step-0-18" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Smoke for ~3 hours or until the hot dogs have reached 155-160°F. If you have an ugly or tiny hot dog wait for ~45 minutes and then stick your probe into that one to get a temp.</span></div></li><li id="wprm-recipe-3655-step-0-19" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove your hotdogs and immediately place into an ice bath, for a few minutes, to stop them from cooking and to also make the cellulose casings easier to remove.</span></div></li><li id="wprm-recipe-3655-step-0-20" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove from the ice bath and pat dry. Place into a fridge to let cool overnight.</span></div></li><li id="wprm-recipe-3655-step-0-21" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove the hot dogs and pull the casings off of them. I used ground venison instead of the ground beef and venison pan sausage instead of turkey breakfast sausage. The outcome was delicious!</p><p>I know a lot of people will think meatloaf is boring and might not be as big of a fan as me and my dad (we make meatloaf sandwiches with the leftovers lol) but meatloaf is an easy way to use some ground venison and sausage. Also, it is really one of the easiest meals to prep for. Just mix some stuff together and throw it in the oven and boom your done! A little spicy ketchup and mashed potatoes on the side can also liven up the meal 😉. Next time you’re wondering what to make for dinner throw this tried and true staple together and ENJOY!</p>								</div>

									<p>When lists of gross food get thrown out one vegetable always gets its fair share of hate. Brussels sprouts! Maybe it’s because of the way most people had them growing up, boiled and slimy, but brussels sprouts have gotten a bad rap. I didn’t know I loved brussels sprouts until I tried them shredded with parmesan and roasted in the oven…DELICIOUS! Now I can’t get enough!</p><p>There is a fancy steakhouse around San Antonio that has their own version of some wicked good brussels sprouts. They’re covered in a honey sriracha sauce and charred and they are to die for. They are so good that I joked with my husband that they could make me vegetarian (just kidding though 😉). But in all honestly, my bank account wouldn’t be able to afford it. Those suckers cost $11 for a side! Crazy!</p><p>Because of my love for brussels sprouts, and my thrifty nature, I decided to make my own version, not a copycat, but dang they are good. Also, who doesn’t love a sheet pan meal that you can put all together and just throw in the oven? Quail seemed like the perfect meat to go with this recipe, but any white game bird will do. Pair with some rice and you have yourself a delicious meal. Enjoy!</p>								</div>
