Ingredients

  • 1 large sweet/yellow onion diced
  • 1 red bell pepper deseeded and diced
  • 1 jalapeño deseeded and diced
  • 1/2 lb thick cut bacon
  • 4 cloves garlic minced
  • 1 lb ground venison
  • 3 15 oz cans Pork & Beans
  • 1 T Dijon mustard
  • 1 T yellow mustard
  • 1/4 C brown sugar
  • 1/3 C ketchup
  • 1/4 C molasses
  • 1 T Worcestershire
  • 1 T soy sauce
  • 2.5 T favorite rub I used Chupacabra
  • salt and pepper to taste

Instructions

  • Preheat smoker to 250℉. Any chips will work. I used apple, but any will taste yummy. Grease the foil casserole dish.
  • In a pan over medium heat, cook the bacon. Once cooked, remove bacon from the pan and chop it.
  • Next, using the bacon grease, cook the diced peppers for 2 minutes. Then add onions in and cook for a total of 10 minutes or until everything is browning and fragrant.
  • Add in venison, garlic, and rub seasoning. Cook for 15 minutes or until fully cooked. Make sure to break up the meat.
  • Add in Pork & Beans, sauces, brown sugar, and bacon. Fully combine.
  • Transfer to your grease casserole pan.
  • Smoke for 2-3 hours or until desired thickness. ENJOY!
