Grind nilgai and pork one time.
In a separate small dish, combine seasonings. Sprinkle over meat and mix together with your hands. Grind nilgai, pork again with the seasonings . This ensures an even and smoother mixture.
Form the burgers into patties that will fit your buns.
Heat up your grill to medium-high heat.
Butter your buns on both sides.
Put your burgers on the grill and cook for around 6 minutes with the grill closed.
Flip your burgers and cook for another 6 minutes. Top with your cheese after this and cook for an additional minute to melt.
Remove your burgers from the grill and put your buns on the grill.
Brown your buns to desired toastiness flipping to get both sides. I did ~1 minute total for all sides.
Remove buns and create your burger adding any of the toppings desired.
