WOAH Burger

One of the most extravagant things I have ever made! This will work with any meat I just happened to have some Nilgai on hand.

Ingredients

Special Sauce

  • 1/2 onion minced
  • 3 T salted butter
  • Pinch of sugar
  • 3 T Grillo’s pickles food process or chop finely
  • 1/4 C ketchup I used Heinz no sugar added
  • 1/4 C Duke’s mayo

Nilgai Burger

  • 2 lbs Ground Nilgai I used 80:20 nilgai:pork
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Special Sauce

  • In a frying pan, melt butter over medium-high heat.
  • Add minced onions and a pinch of white sugar.
  • Cook until browned/caramelized.
  • When done, scoop out browned onions and remaining butter into a small mixing bowl. Add pickles, ketchup, and mayo.
  • Mix.
  • For best results, chill in the refrigerator before using. This will allow the sauce to flavor up. Enjoy!

Nilgai Burger

  • Grind nilgai and pork one time.
  • In a separate small dish, combine seasonings. Sprinkle over meat and mix together with your hands. Grind nilgai, pork again with the seasonings . This ensures an even and smoother mixture.
  • Form the burgers into patties that will fit your buns.
  • Heat up your grill to medium-high heat.
  • Butter your buns on both sides.
  • Put your burgers on the grill and cook for around 6 minutes with the grill closed.
  • Flip your burgers and cook for another 6 minutes. Top with your cheese after this and cook for an additional minute to melt.
  • Remove your burgers from the grill and put your buns on the grill.
  • Brown your buns to desired toastiness flipping to get both sides. I did ~1 minute total for all sides.
  • Remove buns and create your burger adding any of the toppings desired.
  • ENJOY!
