Cheesy Broccoli Rabbit Bake

Ingredients

  • 2-2.5 lbs bone in rabbit quartered out with the backstraps
  • 2 cans chicken broth
  • 1 can cream of mushroom
  • 2 tsp onion powder
  • 1/2 tsp thyme leaves dried
  • 1 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/2-1 tsp red pepper flakes can omit
  • 1 onion semi-finely chopped
  • salt to taste
  • pepper to taste
  • 2 C frozen broccoli thawed, chopped finely
  • 1/2 C sour cream
  • 2 C rice
  • 2.5 C cheese

Topping

  • cheese melted on top
  • french's fried onions
  • sour cream
  • paprika
  • hot sauce

Instructions

  • Add chicken broth, cream of mushroom, onion powder, thyme, garlic powder, paprika, red pepper flakes, and chopped onion to the crockpot.
  • Mix all ingredients until well combined.
  • Add rabbit and spoon over mixture to make sure rabbit is covered.
  • Cook on high for 4 hours.
  • Once the rabbit can be shred, remove all of the bones and shred into bite size pieces.
  • Add broccoli, sour cream, rice, and cheese.
  • Mix until well combined.
  • Cook on high for 3-4 hours, or until the rice is cooked.
  • Top with cheese, fried onions, and paprika. Replace lid and let the heat melt the cheese.
  • Serve with sour cream, hot sauce, and additional cheese if desired. Enjoy!
