In reply to <a href="https://wifeofahunter.com/duck-and-sausage-gumbo/#comment-117">Brandon</a>.

Then yeah just bring them up to temp whatever way you have available (don't overcook them though) and use chicken broth. You won't get as robust of a flavor with chicken broth, but it should still be good. Let me know how it goes!

Thanks so much for the reply. So, I was just given a gallon bag of mostly breast meat from my brother in law.... So, I actually dont know how much duck I actually have. And, without the bones, skin and legs don't think that's going to create a very good broth.... would you think chicken broth would be an adequate substitute? And if so, what alterations to your process would you make, given what I have?

I forgot to link the duck broth recipe (https://wifeofahunter.com/duck-broth/) in the ingredients so thank you for pointing it out! I use 12 teal still on the keel bone/breast plate to make my broth. That cooks the meat and you continue it in the gumbo. I used 12 teal because I made a big ole pot of gumbo and because they're one of the smaller ducks. If you were to use a big fat mallard it would take way less lol.

Hey there! I am looking to make this recipe and just need some clarification on what the first line of the ingredients means... Are you saying this recipe calls for 12 teals? If not, how much duck meat? Also, how would you recommend cooking the duck? I was thinking smoked, unless you had a preferred style.
Would love to experience this dish you rave about, sounds like its going to be pretty awesome.
