In reply to Brad. Hi! I think the error came from the pheasant I had being bigger than usual, so I added a little extra salsa in to compensate. Pheasant will dry out if there is not enough moisture when cooking. I have added in the notes for the salsa that more may be needed if your bird is bigger than normal. I try to make sure all my meat is covered in salsa so it soaks up all the juice and stays tender! I hope this helps!
